You will need:
- 48 large Monterey mushrooms
- 3⁄4 cup hot sausage
- 1⁄4 cup onion, finely chopped
- 4 ounces Monterey Jack cheese, thinly sliced and julienned
Preheat oven to 350 degrees. Clean mushrooms, remove stems and set aside. Brown sausage, adding onion near end of cooking time. Drain and blot dry on paper towels.
Stuff caps with meat mixture.Top with 2 strips of cheese in a cross formation. Bake in a shallow ovenproof dish for 15 minutes or until cheese is melted and mushrooms are tender. Transfer to a serving platter and serve warm.
